Shiga toxin–producing Escherichia coli (STEC) infect more than 100,000 individuals each year and are a major cause of lethal food-borne infections (1, 2, 3). STEC produce two related toxins, Shiga toxin 1 (STx1) and 2 (STx2), which kill cells by blocking ribosomal protein synthesis (4, 5).
