Thermal processing is an important method of food preservation, controlling the presence of microbial spoilage organisms in foodstuffs to ensure products are safe. Thermal technologies range from sterilisation (such as canning) to milder pasteurisation heat treatments (such as cook-chill); they can be validated for safety and optimised for quality. |
