Undercooked pork and the risk of hepatitis E infection

Hepatitis E infection is a disease of the liver caused by hepatitis E virus (HEV). This virus can infect both animals and humans. Hepatitis E virus infections have been linked to the consumption of raw or undercooked pork or game meat. Infection can also occur through drinking HEV contaminated water or shellfish. Most people infected with hepatitis E recover fully within 4-6 weeks without any treatment. However, people with suppressed immune systems may develop chronic (long-term) infection and more severe liver or neurological disease can also occur in a small number of cases.
