Description:In FHI-1 an extensive number of bacteria were screened for their ability to hydrolyse milk proteins. These were cultured in casein or whey protein-based substrates or skim milk to generate peptide rich fermentates to be further screened in bio-assays with the ultimate aim of identifying bio-active peptides which impact positively on human health. An interesting outcome of FHI-1 included bioactivity associated with microbial metabolites.


During FHI-2 the successful candidate will continue to research the application of QPS (qualified presumption of safety) strains to yield bioactive milk-based products, optimize bioactive fraction production, characterise bioactive components, and further develop the use of Cell Free Extracts for the generation of bioactives.

The successful candidate will join a research team working on the use of high pressure and temperature in food processing for production of safe and nutritious, meat and seafood meals with extended shelf-life at chilled or room storage temperatures.
