Campylobacter currently gives rise to the highest number of food poisoning cases in the UK, and is the government´s number one target for reducing illness in the community. This seminar will look at why Campylobacter is such a problem to manage and discuss various new control measures and systems available. Topics to be covered will include:

•Recent outbreaks and laboratory methods
•Rapid surface chilling with liquid nitrogen
•Biofilms from organic matter in chicken carcasses
•Campylobacter decontamination using steam and ultrasound
•Changes of Campylobacter numbers on broiler carcasses during and following processing
•Reducing Campylobacter loading using cold air
